Easy Black Bean Corn Salsa

So just like every other Mom or working girl, I peruse Google or Pinterest for new recipes often.  I find great recipes of course, but often they are more involved than I have time for or the ingredients are literally unheard of in my local grocery store.  I've been branching out and trying to do more experimenting on my own.  Something completely from scratch or a combo of a couple different recipes to pull something amazing off.  


Lately, I've been on a kick...a fresh salsa kick.  Guys trust me...this is simple, easy,  6 ingredients and you may never go back to jarred salsa again.  Plus it's all fresh, and you don't have to fill guilty eating it. 


Easy Black Bean Corn Salsa

1 jar black beans drained

2 cans Rotel diced tomatoes, Mexican style with Lime & Cilantro drained a little, a little of the juice is fine

1 bell pepper (orange or yellow (just not green) diced 

1 half red onion diced 

2 ears of corn, steamed and cut off stalk (yes you can use frozen or canned if you want, eye ball it, about 1 cup of corn)

fresh cilantro (a few sprigs)

2 tablespoons red wine vinegar

1 teaspoon extra virgin olive oil

1 teaspoon lime juice

1 teaspoon garlic powder

salt & pepper to taste

Toss it all and enjoy.  Chill in fridge for 20 mins, it's better chilled.  

(Obviously you're going to eat this with tortilla chips!  I didn't have to tell you that, right?)
